Darcy’s Delicious Pumpkin Bread


Darcy’s Great-Grandmother’s Pumpkin Bread Recipe

3 1/2 cups plain flour
2 tsp bicarbonate of soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 cups sugar
1 cup oil (sunflower or vegetable)
4 eggs
2/3 cup water
2 cups tinned pumpkin
2 tsp vanilla extract

Mix dry ingredients, add eggs and blend well. Add sugar, water, oil and pumpkin. Blend well after each addition. Pour into 2 large greased loaf pans and bake at 325 degrees for 1 hour or until a toothpick comes out clean (or almost clean as I think it tastes better when it is a bit underdone on the top).
