Wiesie’s Baby Marrow Tart

500g Baby marrow, grated
2 medium onions, grated
1 tin whole corn kernels
5 eggs
1 cup self raising flour
1 cup cheddar cheese,grated. Keep some for the top
30 ml olive oil
250 ml milk
Seasoning to taste

First mix marrow, onions and corn together. Whisk eggs, add oil and milk to eggs. Add flour to the eggs, oil and milk mixture and fold. Now add the marrows mix  and finally the cheese and mix thoroughly. Pour into a pie dish and bake at 180 C until set and browning on top
Even better the next day

I made Wiesie’s (Michele’s mum’s ) recipe using South African gem squash. It was absolutely delicious and ‘ even better the following day’ !!
